If I've understood your question correctly, then the "delta" you refer to is the amount of underlying used for hedging and is held fixed (ie remains unchanged) until the next re-hedge.....i.e., delta(S+dS, t+dt) = delta(S,t)just before the re-hedge at t+dt.
