What would exit opportunities be for Credit/Counterparty risk analysts

Are there any topics other than options pricing?I have personally taken an actuarial exam that deals with options pricing(binomial, B-S, ito calculus, monte carlo, and brownian motion concepts). It appears that they use log-normal (and hence normal) distribution a lot.

I have taken probability theory course in college and want to see how it is used practically in finance.What papers should I read? I want it to be not too difficult (undergraduate probability theory course level would be great)
