(I always replace canned coconut milk with coconut shreds blended with water. I think I have some food allergy to coconut fat.)

That looks delicious. 

Right now I have (fresh from local farm stand):

Carrots
Parsnips
Red and yellow beets
Fennel 
Mushrooms

As you can see, I am loading up on the fall vegetables!  Looking at recipes tonight and will roast, sauté, puree for soup, etc. tomorrow.
A few decisions to make, but this will be a nice day in the kitchen once I get started.

I also have a small pumpkin left over from Halloween. Tempted to make a pie out of it - but I like it just sitting there as it is too. : )

Roasted parsnips are yummie. Last summer I made raw tagliatelle out of them, which was also delicious with a raw Bolognese-style sauce.
The curry is gone, so tomorrow I'm making this: https://www.farmdrop.com/london/recipes ... nut-squash (kamut instead of spelt, though - for its nutty taste).

cool. I like that site - and have been bookmarking a number of good veg and vegan sites for about a year or so now.

With that plus my collection of cookbooks - I have more than enough for the next few decades!

Here is what's on for tonight:

The fresh Basil is so fragrant - the whole kitchen has that clean green sweet scent now.

I have some good balsamic vinegar and also white wine - so we'll see what emerges...

(Though obviously I need to practice on my food photography.)  : )

And here is an earthy Eggplant Ratatouille - Viva Italia!

So this was challenging and fun.

The Basil is wonderful in both dishes and I think I will start an indoor herb garden soon.

For those who are wondering, well, what kind of wine did you drink with all of that?

Here it is! No, not Chateau de Chasselas or Domaine des Domaines (hehe).

Just a nice little wine from Provence.

The long plaid bag in the background is my skis - waiting for the first big storm...

But now it is time for a good book and a long sleep. : )

good idea. have you ever eaten rutabagas?  maybe "neeps" for those in the UK?

But please do not call them "swedes".

If I told my sister I was having some swedes for dinner, she would ask me why one wasn't enough. : D

I like to mash rutabagas. I never got used to the midwestern habit of referring to them as Swedes, but I obviously get the similarities.

Great - I found some recipes for glazing them too - a little brown sugar won't do any harm.

The ones at the farm stand were locally grown and looked good.

Enjoy November, folks. Holidays coming soon here (however incorrect - e.g. the Native Americans were here already and C. Columbus was not the "first" to discover America, even from a European standpoint).

However, it's a nice time for feasting and preparing for the dark, cold months ahead. : )
