In Ireland and the Netherlands politicians cannot sack judges. But in Poland it is possible, it seems.

I've seen several examples of "aggression against democracy" (the term used by bearish) of late, none from Poland.

item: the remainers in the UK refusing to accept the result of the Brexit referendum and demanding another referendum

item: the establishment and the left in the US refusing to accept the result of the 2016 presidential election and manufacturing the phony "Russian collusion" narrative in an attempt to remove the president from office

item: the EU rerunning referendums  until they yield the desired result
Denmark reran the Maastrict Treaty referendum (1992/1993)
Ireland reran the Nice Treaty referendum (2001/2002)
Ireland reran the Lisbon Treaty referendum (2008/2009)

item: the Greek bailout referendum 2015

Irish judges are opposed to freedom of speech?
Do you want a totalitarian world where criticism of officials (elected or in this case appointed) is a crime?

rerunning a referendum until you get the result you want is an assault on democracy

I still don’t understand this. We haven’t left the EU so the money can’t go to the NHS yet. If we do leave the EU and the money doesn’t go to the NHS then it will be too late.
