The ortolan is served in French cuisine, typically cooked and eaten whole. Traditionally diners cover their heads with their napkin, or a towel, while eating the delicacy. The ortolan is the best kind of fat there is. It's a bulimic bird that you place in a cage 8 inches high, in the dark, with unlimited food and drink for 18 to 24 days.
