Why is Animals underrated?

In my opinion it is the dog's (bollocks). No pun intended.For the first time we see Roger Water's bleak Orwellian world view, and unlike Dark Side of the Moon the material is not quite as, well, ethereal. Gilmour's guitar work has never been better - indeed it is blistering and scorching in equal measures through the album.This was also the onset of the Gilmour v Waters era, a creative tension that did lead to some quite interesting results. Sort of like when The Beatles released The Beatles (aka The White Album), a pretty ironic name giving the fractured state of the band.But I digress... also the direct comparison to Animal Farm cannot be avoided. All in all, probably my favorite album of the classic Pink Floyd era (Meddle through The Wall). It's a pity that it is by and large considered an acquired taste and accessible to only true fans.

The ortolan is served in French cuisine, typically cooked and eaten whole. Traditionally diners cover their heads with their napkin, or a towel, while eating the delicacy. The bird is so widely used that its French populations dropped dangerously low, leading to laws restricting its use in 1999. In September 2007, the French government announced its intent to enforce long-ignored laws protecting the bird.

I'm not a specialist of fine cuisine to be honest, but I don't think ortolan is still a popular dish in France. I would think it is tagged as old stuff. I have never eaten some and/or heard anyone commenting he/she did.
The lady in the video in the Vice article is Maite. She co-hosted a daily cooking show on French national TV for years during the 90s, with co-host Micheline Banzet. The show was called "La Cuisine des Mousquetaires" which says it all. Her recipes were "French traditional cooking". Maite was famous using large quantities of butter/fats and wine/alcohol all the time. But once again that is old-school cooking. And such a show would just not work nowadays.
