My fluffies: Camembert and Bleu (Gorgonzola-style as you can tell from the holes)

No idea why I spontaneously started making them heart-shaped (probably because I love making them!), but in the next batch I will make several small cheeses in shapes of cats!
because you love Neufchatel so much?
Thanks! I didn't know the cheese. A short-lived love of French milkmaids to British soldiers: it easy - ready in 10 days, no ripening. It's not worth the taste buds of long-distance runners like you and I ;-)  My cheeses are fully matured (one of them is set to ripen for 3 months). When I'm more confident in my skills, I will offer a heart of Camembert for you and your wife to share.

My one and only Stilton I ripened in my wine vault. Which sounds perfect. Unfortunately the vault has a leaky roof. And it is below the tank holding fuel oil, which is also leaky. So after a couple of months undisturbed I found the cheese submerged in oily, filthy water. Still delicious. You can’t beat a Stilton.

“Comment voulez-vous gouverner un pays qui a deux cent quarante-six variétés de fromage?” Charles de Gaulle.

Ha, but most of them are Camembert. And none of them is Stilton!

True. They didn't find those 246 cheeses worthy to fight and die for. The British stood to the very end for one Stilton! My grandpa used to say with respect that you were the last ones standing.

Paul, do you make wines too?!

Not yet. I've made nettle beer. And cider accidentally. I do most things once. Until recently i thought I didn't have a hobby. Then I realized that my hobby is to learn something just up to a point, usually at which it gets difficult or I start hurting people, then move on to something else.

Only two people tried it. Me and a judge. Neither died. Jolly bad form to kill a judge.

It's always too short with cats. Maybe she wasn't beautiful, but had that je ne sais quoi about her. Like James Dean, indeed.

Do dogs and cats actually get jealous, or are we just projecting? – Paul Thagard | Aeon Essays

A well written article up to the moment when it mentions the obsolete interpretation of the mirror experiments on chimps from 1970s as an indication of self-awareness (chimps recognised themselves in the mirror it and even tried to remove a mark on their heads that the researchers secretly painted there). The fMRI studies 30 years later showed that the self-recognition and self-awareness use different neural circuits in prefrontal and parietal cortex: the first of their surface of the brain and the second deep inside of them (or something like that :-) ).
