For Chinese investment in the US, the consulting firm Rhodium Group (rhg.com) collects and publishes information. The Paulson Institute in Chicago does some work in this area also. The US government's CFIUS (pronounced see-fius, the Committee on Foreign Investment in the United States) regulates such acquisitions when they are thought to affect US national interests.
For Chinese investment in Africa, Deborah Brautigam of Johns Hopkins is the best academic expert, with an emphasis on collecting accurate data.
For Chinese investment in Europe, you might look at the work of Jerker Hellström "China's Acquisitions in Europe: European Perceptions of Chinese Investments and their Strategic Implications"or Philippe LeCorre's "China's offensive in Europe". Also the German think tank merics.org publishes some reports from time to time.
In Asia ... I don't know.
