If you're looking for the big players in specific commodity markets, an easy and quick way is to check out the exchanges themselves. I work in elecricity trading and all the relevant exchanges post monthly or quarterly reports that rank the market participants according to the volume they trade. If you're doing research, those rankings will be a great source of information. As far as I am aware such ranking as provided by most exchanges, so they should also exist for the other commodities you're looking into. If you don't have Bloomberg or Reuters start by checking out the exchanges' web pages.
