holdem poker

In holdem poker where each person has two cards and everybody at the table shares the 5 community cards do the odds of getting a pair for your two cards if more people join the table?

I not sure I understand your question. If I put the word change in your sentence the answer would be no the odds for you does'nt change if more people join the table, but it's more likely that someone else got a pair.

I have played this game two ways. First, you only deal to the current players. Second, you deal the cards to the empty spots but they get discarded if no one is in those spots.

The number of people at the table, whether real or virtual, makes no difference to your odds. One of the reasons holdem poker is popular is the actions of the players do not affect the order of the deal. This means you can know exactly "what would have happened" after the hand (not the bets, of course, but the outcome).
